Ingredients: for 4 people
450 gr Scamorza smoked  – 2 Eggs – 200 gr bread crumbs – 20 gr Parmesan grated – 4 table spoons olive oil “Extra Vergine” – salt & pepper to taste

Slice Scamorza inso medium slices around 2cm. Mix eggs, salt, pepper to taste and Parmesan. In another dish for bread crumbs to coat Scamorza. Glaze Scamorza with eggs mix and then bread crumbs. Heat the olive oil in the pan and once hot fry Scamorza for around 1-2 minutes on each side it should stay in tacket with a gooey center.
Can add some bread to the dish and tomatoes.
