Oven baked pasta puglinese
Cooking time: 40 minutes Medium difficulty
Ingredients: for 6 people
500 gr Zitoni tagliati – 2 cans of tomato sauce – 200 gr mozzarella – 100 gr mortadella – 50 gr grated parmesan cheese – 50 gr grated pecorino cheese – basil – parsley – 1 onion – garlic – 4 table spoons olive oil “Extra Vergine” – salt
Lightly fry the onion in olive oil then add the tomato sauce. Finely chop the basil and parsley, add to the tomato sauce and cook for 15 minutes.
Cook the ziti tagliati in boiling salted water for about half the recommended cooking time, drain and add some of the tomato sauce, two table spoons of grated parmesan cheese and two table spoons of grated pecorino cheese. Mix together cover the base of baking dish with tomato sauce, pour half the pasta and cover with a layer of sliced mozzarella, sprinkle with grated parmesan and pecorino cheese.
Repeat the operation again with the second half of the pasta and pour the remaining tomato sauce over the pasta finishing with a sprinkling of grated parmesan cheese.
Bake in the oven for 20 minutes. Enjoy!!
Gnocchi alla Sorrentina
Cooking Time: 1 Hour Medium Difficulty
Ingredients: for 4 people
200 gr Gnocchi – 200 gr Tomato – 125 gr Mozzarella – 3 cloves of Garlic – handful of Basil, 40gr Parmesan -4 table spoons olive oil “Extra Vergine” – salt
In a saucepan heat three tablespoons of olive oil and 2 cloves of finely chopped garlic, fry them for about 1 minute, then add the chopped fresh tomatoes (or tinned ones,) add a teaspoon of salt and a little pepper and cook for 40-45 minutes on a low heat. When the sauce has become creamy and dark turn off the heat add a few basil leaves, and put the sauce into a blender and mix well.
Cut the mozzarella into small pieces and put aside until the gnocchi is cooked. Fill a medium size saucepan with water and bring to the boil, adding a tablespoon of salt, add the gnocchi to the boiling water and cook for 5 minutes.
Drain the water from the saucepan leaving the gnocchi, add almost all the blended sauce and 3/4 of the mozzarella and mix until the mozzarella has melted, place the gnocchi into the bowls.
Put the remaining sauce, mozzarella, a few basil leaves and a little grated Parmesan cheese back into the saucepan, mix well and pour on top of the bowls of gnocchi.
Gnocchi it’s ready
Cooking time: 1.5 hours Medium difficulty
Ingredients: for 6 people
250 grams Ricotta
250 grams Mozzarella
500 grams Lasagna
In a pot, cook meat beef, onion, carrot and peas over medium heat until well browned. Add wine and tomatoes sauce. Season with 1 tablespoon salt, pepper. Simmer, covered, for about 45/55 minutes, stirring occasionally.
To assemble, spread 1 1/2 cups of meat sauce in the bottom of a baking dish. Arrange Lasagne at over meat sauce. Spread with sauce, ricotta, Mozzarella, parmesan and basil. Repeat layers, and top with remaining mozzarella and Parmesan cheese.
Bake in preheated oven for 15 minutes at 200 degrees and bake an additional 25 minutes. Cool for 15 minutes before serving.
Mozzarella in Carrozza
Cooking Time : 15/20 minutes Low Difficulty

How to make:
Take two thick slices of bread and cut the sliced mozzarella.Close the
mozzarella cheese between two slices of bread.Prepare a mix with eggs
and milk and another only by mixing flour and bread crumbs.Dip the
bread slices first into the mix with eggs and milk and then in the flour
and bread crumbs.Finally add the mozzarella between two slices of
bread, fry and…Yummy!!
Advice: with mozzarella I suggest you add
some slices of ham ( Prosciutto ).
